Grout is not waterproof
It is porous by design. Anyone describing it as the barrier is describing a callback.
What the assembly actually is
A continuous system behind the tile, taken up the walls and into the corners and joints, with the substrate prepared to accept it.
Why it cannot be added later
It sits behind the surface. Adding it means removing everything in front of it, which is why a corner cut here is paid for twice.
